I have now, for some time, wanted to get back to writing posts for my blog. But every time I thought about it, I sat some high goals for writing an exceptional piece, about one of the larger topics I have on my very large list, of potential topics. This just made the task of writing a blog post grow to tremendous heights. And therefore of course, I kept putting it off.
I wonder if there is a term for this. Procrastinating on restarting something, because of too high expectations towards the final product?
Oh well, I finally decided to start somewhat easier, by sharing a little recipe. I have quite a few recipes, that I use in rotation. All very healthy and high in protein. But they also share the fact that they take no more than 10 minutes to prepare. I plan on sharing all of them over time, so consider this a start.
First up is my chicken-cauliflower-avocado dish. The dish almost explains itself, it is just those 3 ingredients mixed in a bowl. I use pre-prepared sliced chicken, bought in 150 gram packaging and I use two of those, for a total of 300 grams of chicken. Then I use one ripe avocado. The best results come when the avocado has gotten slightly soft, so it is possible to mash it. Then finally I use half a head of cauliflower, cut into small pieces. On the picture above I also added a little spinach.
Once you have everything in a bowl, add some salt and pepper, then mix everything around and mash the avocado. Tastes wonderful! I use it as the first meal at the moment, to break my fast an hour before noon. It does not contain too many carbs, first thing in the morning, and the avocado contains a good amount of healthy fats.
You can swap cauliflower with broccoli or chicken with tuna – they are all tested and tastes very good as well.
Enjoy your meal!
